Keeping the Holiday's in Perspective



"I want that" This time of year I seem to hear that statement a lot. So to help the family keep the Holiday's in there true perspective we volunteered at the Ronald McDonald house. This is a wonderful organization and outreach. Families are able to live in a somewhat home environment while their children are receiving treatment. Most patients have severe life threatening illness. It was a joy to be able to feed these families and have the children sing Christmas songs. I watched my girls play and laugh with very sick children. For that moment no one was sick they were just children laughing and having fun. I watched as a little boy decided he would eat some macaroni and cheese and then come and ask for some more. What joy it was to see someone enjoy something so simple. I also saw a hurting mother trying to be the martyr. She would not accept the food and appeared to have been crying. I relate to her the most. Mothers through time have been the ones to solve the childrens problems and take away the hurts. The Holidays seemed different after that visit. We were thanked for helping but I had to stop and thank them for allowing us to come. I am a grateful mother.

Homemade whole wheat cinnamon rolls



This recipe is from "Give Us This Day Our Daily Bread" cookbook. Favorite recipes from the Belle Center Amish Community.

2 pkg. active dry yeast
2 1/2 cup warm water
4 Tbsp. shortening ( I use olive oil)
2 tsp salt
6 cup whole "white" wheat
1/4 cup honey

Dissolve yeast in water. Stir in honey. Add shortening (olive oil) and salt and 2 cup flour. Mix well. Stir in remaining flour and let rise (approx. 45 min.) until double in bulk. Punch down well. Let rise again. Roll out and put in pans. I let it rise again. Makes 2 large loaves or 3 small ones. Bake at 375 for 30 - 35 min.


To make the cinnamon rolls I used half the dough and rolled it flat added melted butter, cinnamon and sugar. Roll the dough up and slice into rolls. Place rolls in a baking pan. Allow to rise. Bake at 350 for 15 to 20 min. Glaze is powdered sugar and 3 tsp of milk.

I had sat my camera on the kitchen counter. When I looked down at the camera this is the picture I saw. I think this is a peaceful picture of my kitchen.

What's for supper?




The last two nights supper has been fresh blackeyed peas, cornbread dressing, homemade bread, and cranberry sauce.
We have been cooking from what is in the pantry. This is a good way to save money and use up things left in the house.

A Picture Guide of how to make Bread

Picture of the ingredients I used


2 pkg. active dry yeast
2 1/2 cup warm water
4 Tbsp. olive oil
2 tsp salt
1/4 cup honey

This is with 2 cups unbleached bread flour and the above ingredients listed
This is with 4 cups unbleached bread flour


This is with 6 cups flour (4 cups unbleached bread flour and 2 cups white wheat)


Mixing it together but not completely kneeding see how sticky


Transfered mixture to another bowl and poured olive oil on top
Covered with a towel and placed in a warm spot in my kitchen for 45 min.


Spray loaf pans with no stick cooking spray


Dough after 1 hour note: Dough was punched down and allowed to rise again before going to next step (pictures omited)



Dough taken out of the bowl and laid on the kitchen counter
Dough cut in half for 2 loves


Dough rolled out with flour added to the counter and rolling pin


Bread shaped into loaves and placed in pans


Dough after rising 40 min
Bread after being baked at 375 for 35 min. then buttered on top

Bread covered and allowed to cool
